Cheesy Shrimp Canapes

Ingredients

10 slices white bread

2 T butter or margarine

½ tsp thyme leaves

½ of pkg (8 oz) frozen shelled deveined shrimp, cooked and chopped

½ c Swiss cheese, shredded

⅓ c mayonnaise

½ c fresh bread crumbs

¼ tsp salt

Fresh dill for garnish

Directions

Using 2 inch round, fluted cookie cutter, cut 2 circles from each bread slice (reserve scraps for bread crumbs).

In small saucepan over low heat mix butter with thyme. With a pastry brush, coat bread circles with butter mixture and place on a cookie sheet. Bake in 400 degree oven for about 10 minutes or until circles are golden.

Meanwhile, combine shrimp with remaining ingredients except dill and shape mixture into twenty balls.

Lightly press shrimp balls onto toasted bread circles.

About 7 to 9 inches from sources of heat (or at a 450 degree oven) broil canapes 10 minutes or until hot and bubbly.

To do ahead, press shrimp balls on toasted bread circles, cover and refrigerate. About 20 minutes before serving, broil as above.
