
1 ½ lbs sirloin or top round, thinly sliced
½ tsp salt
2 tbsp oil
1 cup cut-up onion
1 cup beef broth
1 clove garlic, minced
2 green peppers, cut-up
2 tbsp cornstarch
¼ cup cold water
3 tbsp soy sauce
2 tomatoes, peeled and cut into eighths
3-4 cups hot cooked rice
Sprinkle meat with salt. Heat oil in skillet, brown meat. Add onion, broth and garlic. Cover and simmer till meat is tender (about 10 min). Add green pepper; simmer 5 min. Blend cornstarch with water; stir into mixture in skillet. Cook, stirring constantly, till it thickens and boils. Boil 1 min. Add soy sauce and tomatoes; heat through.
Serves 6
VARIATION: pineapple chunks or kumquats may be added before serving
