
1 stick (4oz) butter or margarine
1 small bunch green onions, chopped
½ cup finely chopped parsley
2 tablespoons flour
2 cups light cream
½ pound (2 cups) grated Swiss cheese
1 tablespoon sherry wine
Red pepper to taste
Salt to taste
1 pound lump crab meat
Melt butter or margarine in a saucepan. Saute onions and parsley. Blend in flour, slowly add cream stirring until thickened. Add cheese and stir until melted. Add sherry, red pepper and salt. Gently fold in crab meat. Makes 20 servings as an appetizer.
