Joan’s Swedish Meat Balls

Ingredients

¾ # lean ground beef

½ # ground veal

¼ # ground pork

1 ½ cups soft bread crumbs

1 cup half and half

½ cup chopped onion

1 egg

¼ cup finely chopped parsley

1 ½ t salt

¼ t ginger, dash pepper and nutmeg

Directions

Grind meats together twice, soak bread in cream 5 min. Cook onion in 1 T butter till tender. Combine ingred and mix 5 min with electric mixer. Brown balls and shake pan to keep round. 

Gravy:

2 T flour

¾ cup canned beef broth

¼ cup cold water

½ t instant coffee

Add broth, water and coffee (to flour - not in directions but they don’t make sense otherwise). Heat and stir until thickened. Return meat to gravy. Cover. Cook slowly about 30 minutes.
