Naiditch’s Latkes

Ingredients

1 pound potatoes, peeled and grated

1 egg, beaten

1 tablespoon flour

Salt and pepper, to taste

¼ to ½ cup grated onion

Oil for frying

Directions

Squeeze potatoes until dry; stir in egg and flour into grated potatoes. Meanwhile, heat about ½ inch oil in skillet; drop in spoonful of potato mixture (it will be soggy and wet) Fry until brown. Drain on paper towels. Serve with sour cream and applesauce.
