
2 ¼ cups sifted flour
1 tsp baking powder
2 tsp baking soda
1 cup sugar
½ cup chopped pecans
1 6 oz can frozen orange juice
Hot water
2 large eggs, well beaten
2 Tbls melted shortening
1 tsp vanilla
Set oven at 375. Grease a 9x5 loaf pan, line with wax paper and grease again.
Sift together flour, baking powder, soda and sugar. Stir in nuts.
Put orange juice int measuring cup and add hot water to make 1 cup. Beat juice into well-beaten eggs. Beat in melted shortening and vanilla. Add mixture slowly to dry ingredients, blending with wooden spoon to form a smooth batter but do not overbeat. Turn into pan and bake about 45 min. Test with toothpick. Let rest 10 minutes in loaf pan before turning out on cooling rack.
