Oven-Fried Chicken

Ingredients

Makes 4 or 5 servings

⅓ cup vegetable oil

⅓ cup (⅔ stick) butter

1 cup flour

1 teaspoon salt

2 teaspoons black pepper

2 teaspoons paprika

1 teaspoon garlic salt

1 teaspoon dried marjoram (optional)

8 or 9 chicken pieces, legs, thighs, breasts

Directions

To prepare oven, baking pan:

Preheat oven to 375 degrees. Place oil and butter in shallow cooking pan, such as a jellyroll pan. Place in preheated oven to melt butter.

To prepare chicken: 

In large paper sack, combine flour, salt, pepper, paprika, garlic salt and marjoram. Roll chicken pieces, 3 at a time, in melted butter mixture. Drop in sack. Shake to cover. Place on dish or wax paper.

To bake chicken:

Place chicken in prepared pan, skin side down. Bake for 45 minutes. Using spatula, turn over. Bake for 5 to 10 minutes or until top crust begins to bubble.
