
Makes 4 to 6 servings
1 tablespoon peanut or vegetable oil
1 pound pea shoots, rinsed and drained
2 tablespoons minced garlic
½ teaspoon salt
Heat wok or large deep skillet until very hot. Add oil and pea shoots. Stir-fry over medium heat for 2 to 3 minutes. Add garlic and salt. Stir-fry, using tongs to distribute garlic as evenly as possible through tangle of shoots, for 2 to 3 minutes or until pea shoots are wilted and have turned deep green. Serve hot or warm.
