Red Cabbage - Lowell Inn

Ingredients

1 ½ cups water 

1 cup vinegar

½ cup sugar

6 whole peppercorns 

2 whole cloves

2 whole allspice

1 bay leaf

2 slices bacon, cut into small pieces

1 medium-size head red cabbage, sliced

1 medium-size onion, sliced

2 large apples, peeled, cored and quartered 

1 teaspoon cornstarch

Directions

Combine water, vinegar and sugar in large pan; add spices, which have been tied together in cheesecloth bag. Simmer, covered, 15 minutes. Cook bacon until crisp; save drippings. Add bacon, bacon drippings, cabbage, onion and apples to vinegar mixture. Simmer, covered, 1 ½ hours. Combine cornstarch with 1 teaspoon cold water. Stir into cabbage and heat. Remove spices. Makes 10 servings.
