
Prepare the chicken broth as in the above recipe (To boil chicken). Pour 1 cup chicken broth over 2 cups boiled rice (⅔ cup uncooked). Make chicken gravy as in the Chicken a la King using 3 cups cooked chicken but do not add the mushrooms, green pepper, or pimiento at this point.
Grease a 12x7 ½ x2-in baking dish. Place half of the rice mixture in the bottom of dish; sprinkle ¼ cup toasted slivered almonds, 1 tablespoon sliced pimiento an ½ cup sauteed sliced mushrooms over the rice mixture.
Pour over this layer the rest of the rice mixture, then add another layer of ¼ cup almonds, 1 tablespoon pimiento and ½ cup mushrooms. And lastly, the rest of the chicken gravy. Top with buttered crumbs. Bake at 350 degrees for 45 minutes. Makes 8 servings.
