
4 chicken breast halves, about 2 pounds total
2 tablespoons all-purpose flour
2 tablespoons vegetable oil
½ cup thin-scallions
1 cup ketchup
1 cup coke
½ teaspoon chili powder
½ teaspoon ground cumin
½ teaspoon dried oregano
¼ teaspoon black pepper
Heat oven to 375 degrees. Dust chicken lightly with flour, shaking off excess. In a 10-inch skillet, heat oil over high heat. Add chicken and brown about 3 minutes on each side. Place chicken skin-side-up in a shallow 2-quart baking dish; sprinkle with scallions. Mix remaining ingredients; spoon half over the chicken. Bake 20 minutes. Pour remaining sauce over chicken and bake 15 minutes longer, until chicken is tender and sauce is bubbling. Makes 4 servings
