Broccoli-Bacon Salad

Ingredients

1 bunch broccoli, about 3 stalks

1 small red onion, thinly sliced

12 strips bacon, crisply fried

1 cup whole roasted sunflower seeds

½ cup raisins

Dressing:

1 cup mayonnaise, light or regular

½ cup sugar

2 tablespoons vinegar

Directions

Completely chop broccoli. If using a food processor, cut up the flowerets by hand so they don’t get smaller than bite size. Add onion slices. Crumble in bacon and add sunflower seeds and raisins.

For the dressing, combine mayonnaise, sugar and vinegar. Mix with wire whisk until sugar is dissolved. Add to vegetables and toss.
