
2 4” spanish onions
1 tsp salt
2 cups pancake mix
2 cups club soda or beer
Slice onion ⅛” thick. Sprinkle with salt. Refrig 2-3 hours. Add enough beer or soda to the pancake mix so it’s the consistency of butter. Dip in flour then in batter. Fry at 425 3-4 min. Salt.
