
4 eggs
2 cups sugar
3 (4 ½ oz) jars strained baby food carrots
1 med. can pineapple (crushed) drained
2 cups flour
2 tsp soda
1 tsp salt
2 tsp cinnamon
1 tsp vanilla
1 cup chopped nuts
1 ½ cups oil
Frosting
2 (3 oz) pkgs cream cheese
1 stick butter (½ cup)
1 tsp vanilla
2 - 2 ½ cups confectioners’ sugar (I always need more)
Mix eggs, sugar and carrots and beat. Then add well-drained pineapple, flour, soda, salt, cinnamon, vanilla and nuts. Add oil last. Bake in a greased 9-13 inch pan at 350 for 55 minutes.
