
Makes 4 to 6 servings.
1 cup cut-up chicken
1 cup shredded carrots
2 cups shredded lettuce
1 cup chopped celery
1 diced small onion
6 eggs, hard-cooked and chopped
½ sharp cheddar cheese, chopped or shredded
Mayonnaise to taste
1 small can shoestring potatoes
In large bowl, combine all ingredients, except shoestring potatoes. Toss to combine with mayonnaise. Season with a little salt and pepper. Refrigerate. When ready to serve add shoestring potatoes.
