Cranberry-Nut Bread

Ingredients

⅓ cup butter

⅔ cup granulated sugar

½ cup brown sugar, packed

2 eggs

1 teaspoon vanilla extract

1 ½ teaspoons allspice

1 teaspoon orange bits

2 cups flour

1 ½ teaspoon baking powder

⅛ teaspoon soda

½ teaspoon salt

½ cup orange juice

1 ½ cups cranberries, ground

½ cup chopped pecans

Directions

Cream butter, add sugars and continue to cream until light and fluffy. Add eggs, one at a time, beating well after addition of each. Stir in vanilla, allspice and orange bits. Sift together flour, baking powder, soda and salt. Add alternately with orange juice to creamed mixture. Stir in cranberries and pecans. Pour into greased 9 ¼ x 5 ¼ x 2 ¾ - inch loaf pan. Bake in 350F oven 1 hour and 10 minutes or until cake tester inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan and place on wire rack to finish cooling. Makes 1 loaf.
