Elsie’s Rice Pudding

Ingredients

½ cup rice

2 cups milk

1 stick cinnamon

3 beaten eggs (NOTE: I use 4)

½ cup sugar

2 cups milk (NOTE: or a little less)

1 or 2 tsp vanilla if desired (NOTE: yes)

Directions

Cook rice, 2 cups milk and cinnamon stick together. Place in casserole dish and add remaining ingredients. 

Sprinkle top with fresh grated nutmeg and dot with butter (NOTE: I also sprinkle a little cinnamon)

(½ cup raisins if desired)

Place dish in a cake pan of hot water and bake at 325-350 about 1 hour

(Double this make 2 ½ qt casserole dish)
