
4 cups corn flakes (or 1 cup packaged corn flake crumbs)
⅓ cup butter or regular margarine, softened
2 tablespoons sugar
2 tablespoons finely chopped nuts
Filling:
½ cup butter, softenened
1 cup sifted powdered sugar
2 squares (2 ounces) unsweetened chocolate, melted
1 teaspoon vanilla flavoring
3 eggs
If using corn flakes, crush into fine crumbs. Combine corn flake crumbs, ⅓ cup butter, sugar and nuts in an 8x8x2 pan; mix well. Reserve half the crumb mixture for topping; with back of tablespoon press remaining crumbs evenly and firmly in bottom of pan to form crust. Chill.
Measure the ½ cup butter and powdered sugar into mixer bowl; mix on low speed until combined. Add cooled melted chocolate and vanilla; mix well. Add eggs one at a time. Beating on medium speed about 5 minutes after each addition. Spread filling evenly over crumb crust; sprinkle with remaining crumbs mixture. Chill several hours until firm or freeze overnight. To serve. Cut into squares. Makes 2 servings.
