Lemon Poppyseed Bread

Ingredients

Makes 1 loaf

1 ½ cups sugar

¼ cup lemon zest

1 cup oil

6 eggs

1 ⅔ cups all-purpose flour

2 teaspoons salt

1 tablespoon poppyseeds

Directions

To make bread:

In mixing bowl, blend sugar, lemon zest and oil. Beat for 5 minutes. Add eggs, 1 at a time, blending well after each addition. In separate bowl, combine flour, baking powder and salt. Sift together. Add poppyseeds to dry mixture. Blend dry ingredients into egg mixture just until moistened.

To bake bread:

Use vegetable spray to coat 9- by 5-inch loaf pan. Pour batter into pan. Bake in 325-degree oven for 30 to 40 minutes, or until toothpick inserted in center comes out clean. Remove loaf from oven. Let set in pan for 5 minutes. Remove from pan. Cooling on rack. Wrap tightly when cool. Lemon glaze “is your preference”.
