
1 head lettuce shredded (handwritten note: I like romaine)
1 cup celery, chopped
1 T minced parsley
2 green onions and tops sliced
1-2 cans mandarin oranges, drained
½ cup caramelized almonds
In large bowl, combine lettuce, celery, parsley, green onions and oranges.
Dressing:
½ t salt
2 T vinegar (handwritten note: or 3)
¼ cup oil
¼ t tabasco sauce
2 T sugar
Dash of pepper
Combine the above
Caramelize Almonds:
In heavy skillet over low heat, melt 4T sugar, then add ½ cup slivered almonds. When sugar is melted and turned brown, stir to coat almonds well. Cool on tin foil. Break apart when cool.
Just before serving, add caramelized almonds to the lettuce mixture and toss with dressing.
Note: salad is much better if you don’t forget to put in the nuts
