
3 cucumbers
1 medium white onion
White vinegar
Salt and sugar to taste
Freshly ground black pepper
Slice cucumbers paper thin (peeling or not, as you wish). Slice onions into rings. Place cucumbers in clean dish towel; roll towel and squeeze - hard!. Try to remove as much moisture from cucumbers as you can. Place squeezed cucumbers in a bowl; add onion rings. Cover with vinegar to which a small amount of cold water and a hit of sugar have been added. Add salt. Sprinkle freely with pepper. Refrigerate and let stand several hours - the colder the better. This makes a wonderful accompaniment for cold meats. Makes 4 to 6 servings.
