
3 cups white sugar
½ cup water
¾ cup white corn syrup
3 egg whites (well beaten)
1 tsp vanilla
½ cup chopped walnuts
Mix sugar, water and syrup.
Boil to firm ball stage.
Pour half of syrup in a slow stream over beaten egg whites.
Beat constantly (electric mixer)
Boil remaining syrup in it reaches the crack stage. Pour over mixture and continue beating.
When candy will barely hold it’s shape, drop by teaspoon on waxed paper or put in a buttered pan.
