No-Fail Meringue No. 1

Ingredients

Topping for 9-inch pie

2 tablespoons sugar

1 tablespoon cornstarch

½ cup water

3 egg whites

¼ teaspoon salt

¼ cup sugar

1 teaspoon vanilla

Directions

Combine 2 tablespoons sugar with cornstarch in saucepan. Gradually stir in water. Cook over low heat until thick and clear. Cool. Meanwhile, beat egg whites until soft peaks form. Slowly beat in cooked cornstarch mixture, salt, ¼ cup sugar and vanilla. 

Beat until stiff but not dry. Spoon over pie filling to seal sides of crust. Bake in 350-degree oven for 20 minutes.
