
2 ¼ cups sifted all-purpose flour
2 ¼ tsp baking powder
¼ tsp soda
¼ tsp salt
1 cup sugar
¾ cup chopped nuts
1 egg, beaten
2 Tbsp salad oil
¾ cup orange juice
1 Tbsp grated orange rind
Sift together flour, baking powder, soda, salt, and sugar. Add chopped nuts. Combine egg, salad oil, orange juice, and orange rind; pour into flour mixture and stir only until smooth. Turn batter into an oiled 9 ½ x 5 ¼ x 2 ¾- inch loaf pan. Bake in a moderate oven (350F) for 60 to 65 minutes. (Note: if loaf is covered with aluminum foil for first 20 minutes of baking, it is less likely to crack on top.) Makes one loaf.
