Red Cabbage

Ingredients

1 med. head red cabbage

1 med. sweet onion

2 large apples

1 T. bacon fat

1 t. salt

1/2 C. sugar

11⁄2 C. water

1 C. vinegar 

1 bay leaf

2 whole allspice

2 whole cloves with heads removed

6 peppercorns

Cornstarch to thicken

Directions

1. Wash and remove outer leaves of cabbage. Remove core and slice.

2. Peel and slice onion. 

3. Peel and quarter apples. 

4. Put all remaining ingredients together in a saucepan and add cabbage, onions and apples. Cover and simmer for 1 ½ hours. (Handwritten Note: 1 ½ hrs? I’d say 10-15 min)

5. Add small amount of cornstarch to thicken.
