
1 cup sugar
1 cup sour cream
1 egg
1 teaspoon vanilla
1 ½ cups flour
1 teaspoon baking soda
½ teaspoon salt
3 cups fleshy cut rhurbarb, chopped
1 cup brown sugar
1 teaspoon cinnamon
To make cake:
In mixing bowl, cream sugar, sour cream and egg. Stir vanilla. Sift flour with baking soda and salt. Stir into creamed mixture. Stir in rhubarb. Pour into greased 9- by 13-inch pan.
To make topping:
Combine brown sugar and cinnamon. Sprinkle over top.
To bake cake:
Bake in 375-degree oven for 40 to 45 minutes, or until done
