Rhubarb Cake

Ingredients

1 ½ cups brown sugar

½ cup margarine

2 eggs, beaten

1 cup sour milk or buttermilk

2 cups flour

1 teaspoon soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon vanilla

2 cups cut-up rhubarb

½ cup nuts, dates or raisins (optional)

Directions

Cream sugar and margarine; add eggs and mix well. Sift dry ingredients together and add alternately with sour milk. Add vanilla, rhubarb and nuts. Pour into greased and floured 9x13 inch pan. Sprinkle over top a topping made of ½ cup brown sugar, ¼ cup flour and ¼ cup butter. Mix until crumbly. Bake in 350-degree oven for 45 minutes.
