Rhubarb Upside-Down Cake

Ingredients

Combine:

3 TBLS melted butter

½ cup sugar

Few drops red coloring

Directions

Add 2 cups diced rhubarb - toss lightly. Spread in 8 ¼ x 1 ¾ inch round baking dish. Prepare 1 pkg loaf size white cake mix. Pour batter over fruit. Bake at 375 for about 35 minutes. Loosen edges; invert on plate. Let stand 3-5 minutes, then lift off baking dish. Server warm with whipped cream.
