Serlins Rhubarb Custard Pie

Ingredients

Lard pie crust - double

1 ½ - 1 ¾ cups sugar

1 TBLS flour

2-3 cups rhubarb (SIDE NOTE: I use 4 cups)

2 eggs

(SIDE NOTE: I add 1 tsp vanilla)

Directions

Mix sugar, flour, eggs till creamy. Add rhubarb.

If using frozen rhubarb thaw and drain

If mixture is dry add a little of the juice

Make a lattice crust for the top - brush with egg and sugar
