
6 lean pork hocks
1 veal leg
Salt and pepper to taste
1 onion, chopped
1 bay leaf
Bit of whole allspice
¼ cup vinegar or more if desired
¼ cup sugar
(plus water to barely cover)
In pressure cooker, combine meat, salt, pepper, onion, bay leaf and whole allspice. Barely cover with water. Boil under 15 pounds pressure for 45 minutes or until very soft. Take meat out of juice. Add vinegar and sugar. (Note: There should be about 6 cups juice.) Add juice to chopped meat. Pour into dishes. Cool in refrigerator.
